Varietal honeys are sourced from particular plants, trees, or locations.
Jarrah honey, for example, is sourced from Western Australia's mighty Jarrah trees and has powerful antimicrobial properties.
Macadamia honey or the fabulous Christmas Bush honey from Tasmania are other uniquely Australian varietal honeys.
Creamed honey has been turned into a thick and firm honey by either 'whipping' or by seeding with a few small crystals of already creamed honey.
Gourmet and specialty honeys are those that have been infused with extra flavours. Examples include ginseng honey or honey and ginger.
