Creamed, Gourmet and Specialty Honeys

Varietal honeys are sourced from particular plants, trees, or locations.

Jarrah honey, for example, is sourced from Western Australia's mighty Jarrah trees and has powerful antimicrobial properties.  

Christmas Bush honey from Tasmania is another uniquely Australian varietal honey sometimes known as Prickly Box.

Creamed honey has been turned into a thick and firm honey by either 'whipping'  or by seeding with a few small crystals of already creamed honey. 

Gourmet and specialty honeys include those that have been infused with extra flavours. Examples include chili honey, ginseng honey or honey and ginger.  Other specialty honeys such as New Zealand's Rewarewa honey are those only produced in limited quantities from rare and/or distinctive sources.
